Master perfumer Roja Dove and master whiskey maker Bob Dalgarno collaborated on the third release in The Macallan's wood-focused Edition series to produce a whisky that combined their distinct skill sets. Dove created Edition No. 3's flavour profile using the same formula he used to create a perfume: identifying complementing fragrances and balancing them with a "counterpoint" note. The resulting beverage is a blend of six American and European oak barrels, with sweet floral flavours on the front end.

Nose: The nose opens with vanilla ice cream, newly cut oak, and delicate florals, as if it were a wonderful fragrance. Ginger, cinnamon, and nutmeg flit in and out in various guises, while orange oil gives understated grandeur. Vanilla adds sweetness, allowing citrus fruits to shine before allowing chocolate to take centre stage. Palate: With hints of apricot, pear, and crisp green apple, this fruit cake is sweet, vanilla-flavored, and rich. A mild resinous oak finish balances hints of ginger and cinnamon Finish: Long, sweet, and fruity, with a lingering effect on the palate. |
