This wine is pleasant because it is dry and velvety on the palate. The second fermentation on Amarone skins in January adds structure and aromas of ripe fruit and delicate spices, as well as body and balance on the palate. Its pleasant structure makes it ideal for pairing with cold cuts, meat-based first courses, mushroom-based first courses, grilled or roasted meats. It complements medium-aged cheeses well. The dish should be served at 18°C.
